Hi~!
This is actually a weird tittle for this treat but there isn't an actual tranlation for their real name (Alfajores de Maicena). This are very common in Chile and sooooo good~! They are delicious~! Yummy~!!!
Ingredients:
150 grs butter
2 eggs
100 grs sugar
100 grs corn starch
150 grs all purpose flour
1/2 tsp baking soda
1 tsp vanilla extract
Dulce de leche (If you don't know what this is, you're missing out. Big time.)
Shredded coconut (Sweetened if you want)
1) Beat together butter and sugar. Once mixed well, add in the eggs. Mix again then add vanilla, baking soda, corn starsh and flour. I like to use the paddle for this.
2) Gather up dough and knead it with hands until it’s nice and smooth, you will get a dough that won't stick to your hands.. Roll it into a ball, wrap with plastic wrap, and place in freezer for two hours.
3) Preheat your oven to 320ºF and grease up a cookie sheet.
4) You will want it to be kind of firm but not hard. It'll be rock hard from the freezer but you can just leave it out on the counter for just a little bit until it softens up. Then you can work it a little bit to soften it back up. Even if it’s rock hard it will come back to a nice workable dough.
5) Roll out the dough untill half an inch thickness. Then use a round cookie cutter and cut as many pairs as you can. Then gatther up dough and do it again.
6) Bake for 10 minutes and let them cool off.
7) Put some Dulce de Leche on a pipping bag and a lot of it in between two cookies, like a sandwich (and when I say "put a lot of it" I mean, A LOT of it)
8) Put some light presure on the sandwich so Dulce de Leche sticks out a bit from the sides and roll them on shredded coconut. The Dulce de Leche will make it stick.
